Ingredients
- 2 boneless, skinless chicken breasts (or thighs if you prefer)
- 1 medium zucchini, sliced
- 1 bell pepper, chopped
- 1 small onion, sliced
- 1 cup baby potatoes, halved (pre-cooked slightly in microwave if desired)
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried Italian herbs (or any favorite herbs)
- Salt & pepper to taste
- Optional: lemon slices or shredded cheese for topping
Instructions
- Prep the foil packets
- Tear 2 large sheets of heavy-duty aluminum foil (enough to fully wrap the ingredients).
- Assemble ingredients
- In a bowl, toss chicken, veggies, garlic, olive oil, herbs, and seasonings until evenly coated.
- Pack the foil
- Divide the mixture evenly onto each sheet of foil.
- Optional: place a slice of lemon or a sprinkle of cheese on top for extra flavor.
- Fold foil over the ingredients, sealing edges tightly to make a packet.
- Cook over the fire
- Place the packets on hot coals or on a grill grate over the fire.
- Cook for 20–30 minutes, turning once halfway through. Cooking time may vary depending on heat and size of chicken pieces.
- Check and serve
- Carefully open a packet to check that chicken is fully cooked (internal temp: 165°F / 74°C).
- Serve straight from the foil for a rustic feel—or plate it with a slice of campfire bread or tortilla.
